A few tweaks in MoJo's kitchen have rendered that would-be, cholesterol-laden monstrosity relatively harmless (if you're not vegan and totally anti-eggs). The real bacon has been replaced with turkey bacon. The butter has been replaced with tomatoes (I'll explain in a moment). The Kraft single has been replaced with a half ounce slice of gruyere. And instead of topping the whole thing off with the other side of the muffin, we'll save that side for another sandwich later.
How can tomatoes replace butter you ask? Well, I wouldn't try that trick in chocolate chip cookies but in this sandwich the tomato creates a soft, jammy consistency that mushes down into the english muffin in a similar fashion. Obviously, it doesn't taste like butter. It tastes like tomato. But, for me that adds a healthy flavor to the sandwich that butter, in all it's lovely creaminess, just can't provide.
I put the rest of my Roma tomato on the side. Another caloric improvement over the Potatoes O'Brien my mother perfected in her young life and served routinely with runny eggs. At MoJo's kitchen we want you to go away feeling like you just ate something pleasing to many of your senses (i.e., voluptuous) but we also want you to go away feeling like you just ate something healthy that didn't fill you up so much you're having to waddle more than walk. We think this little grown-up sandwich fits that bill nicely.
